I think I'll need longer shafts for my CV axles. Will it be possible to have a longer one cut down and re-splined? Will I need to order one custom? Will any decent machine shop be able to do either?

Sam, the splines on those shafts are rolled in. It's a process that forges the splines while is creates them, which makes them very strong. Some spline are cut using a hob or broach, but not the ones on axle shafts. If you were to have a machine shop machine them they wouldn't last very long.

There are places that custom make shafts, I'd contact some offroad axle companys.

Smokey Yunick built a car with independant rear suspension using the transaxle and driveshafts from an eldorado.. gotsta be some way...

what about cutting the shafts and sleeve them with 1/4" wall dom? look at how some driveshafts are built

It used to be common practice to have the thicker 9" Ford axles cut down and resplined, but they were not recommended for racing or hi-perf use.
I'm sure the major axle/rear end specialists could do the job... (for a price of course.. :D) , like Strange, Currie, Moser etc.

I am no expert but what about some spacers at the current hubs or some crazy offset rims. May be cheaper and easier than new shafts.

Just a thought :D

Contact the Driveshaft Shop. They make all kinds of half shafts for modern cars running upwards of 1000 HP/ I would be willing to bet they could trim and sline yours or give you a direction on what will work. [P

Wheels are already going to get spaced out, but I would like to move the wheels back from the motor a few inches if possible. Not sure about the stresses that would put on the CV's though - still looking into that.
