Well, I have not heard of any aftermarket intakes to swap to carbs, and the ignition was all computer controlled, no distributor... I guess it depends on which way you want to go, and how involved you want to get.
You could fabricate an intake manifold and go carbs, and then setup a crank fired ignition. Or you could go more simple, and find a harness, ECM, and such from a dodge truck or viper that came with the V10, and run all the stock stuff...

Stand alone
Any stand alone computer will run it good. Motec probably the best but starts around 3k complete. Crome, mega squirt, fast, Aem. All good systems but a good tuning shop is what it will take to make them all work then your set. Add as many turbo's or a super charger and retune.
